There are some professions that have access to items that others do not. This post will be updated as we find out more, but for now here's what we have:
Explorer: Has access to the Spy Glass through the peddler, it costs 15 Trail Notes. Explorer also has clothes in Oregon City called Survivalist Skins that lower the cost of searching to 11.
Banker: Has access to Fancy Suit, available in Oregon City.
Soldier: Has Soldier Uniform, purchased with coins at any shop after Independence, but before Oregon, gives the player a moderate chance to avoid bandits and a large chance to fight off bandits. Also has access to the Gatling Gun, available in Oregon City, for Trail Notes, (I think it said it is) guaranteed to fight off bandits.

Farmers have access to "Farm Rations" in Independence that provides +125 food for 20 coins.
Soldiers have access to "War Rations" in Independence that provides +400 food for 40 coins.
Interestingly, you can aquire both of these items by choosing the career, then visiting the trading post. You can always change back afterward.

In Independence, the farmer can buy FLOUR. It was cheap, somewhere around 66 coins, and it is +450 food. I don't think other professions have access to this.

Regarding which profession you should be to get the best deal on food:
Soldiers can buy war rations in Independence, MO. They give 400 food for 40 gold. There has been a lot of threads circulating about becoming a soldier, buying your food, and then choosing the profession you want.
War rations give 10 food for 1 gold.
As a farmer, however, you can buy 250 food for 20 gold.
That's 12.5 food per gold.

Make enough trips as a banker, buying all the necklaces you can hold from the peddler and you won't even have to care about the cost of food.

Necklaces are great but aren't the end all be all of money gathering.
Necklaces cost 192 and sell for 700 as a banker. That's a profit of 508 coins.
Cotton costs 75 per in Independence MO and stacks 5 high. It sells for 175 per as a banker. That means a stack costs 375 and sells for 875, for a profit of 500.
Now, while the necklaces do still come out on top, they only do so by 8 coins per inventory slot. The reason I like cotton, though, is that you can buy as much of it as you want in Independence MO, whereas necklaces are completely a luck based item. I have had trips where I see 0 trailside peddlers.
The moral is that if you want to leave a few slots for necklaces down the road go right ahead, but cotton is consistent. It's a gamble - make 8 more coins for a slot counting on a trailside peddler, or lose potentially hundreds of coins if she doesn't show up.
Finally, if you are really unlucky with rivers and bandits and your tradegoods are getting hit, you lose 100% of your investment per slot with the necklaces - with cotton you only lose 20% per item lost.

I buy up all the cotton I have room for but upon leaving Independence, MO I use a chicken soup and it frees up a slot, then as I go I use up my bacon, I still buy up cotton as I can because it is still a very high return on profit and you don't know for certain you'll see peddlers. But as I travel and slots open up I buy up the necklaces as well.

Survivalist Skins ~ $250, "use less energy to search an area, explorer only" but it works with any profession The Spyglass takes searches down to 7 and the survival skins take it down to 3 so it gives 4 energy points off alone.

Not necessarily. While it is entirely possible the survivalist skins do have a 4 energy reduction, it is difficult to make that call without testing them without the spyglass.
4 points is half of 7 rounded up.

say i go out as an explorer, acquire the spy glass. next time through, i play as a banker - will the spy glass (or any other profession-specific item) still work if i'm not the right profession?

That is correct - the spyglass and survivalist skins, along with any other item that says "XXX Only" where XXX is any profession, only works while you are XXX profession. You must be an explorer to get the search energy reduction benefits.
Previous posts in this thread say otherwise. That is because this fact was changed in the last patch in late February. Before you could use such items as any class. Now it is working as intended.
