The animals that appear in the hunting mini game depend on which leg of the Oregon Trail you are on. The following is a complete list of trails along with the animals that appear on those trails.
First, to save some space the names of animals were shortened to 2 or 3 letters. The following list provides the name of each animal and the abbreviation used for each of these animals. Also provided is the "streak" name you get for killing a certain number of animals in a row, along with the number of animals required to get that streak. Note that for the streaks (I.E. Bison Basher) you must kill that animal, and that animal only to get the streak. Killing 3 bisons in a row gets you Bison Basher, but killing 2 bisons, 1 bear, and then a 3rd bison gets you nothing.

Now, the guide. The guide is organized into 7 sections, with each section beginning and ending at trail points you MUST go through regardless of which path you take on the trail (Independence MO, Alcove Spring, Ft Kearny, Ft Laramie, Independence Rock, Ft Hall, Ft Boise, and Oregon City).
Within each section the trail legs are in alphabetical order by the origin point of that leg. For instance, "Ft Kearny - Platte River Crossing" represents the trail leg starting at Ft Kearny and ending at Platte River Crossing.
Each start - end name is followed by a list of the animals that appear in the order they appear. The double colon symbol means the list repeats at this point. Therefore the list Bis - Be - Ra :: means a bison will appear, followed by a bear, followed by a rabbit, followed by a bison, followed by a bear, followed by a rabbit, etc etc.
If only a single animal appears then that trail leg only has that animal. Sq :: means only squirrels appear, and Be :: means only bears appear.
